The French word noisette means hazelnut in English.  Noisette potatoes are balls, scooped out of the potato flesh and then cooked until golden in butter.  They are often used as a garnish for other dishes

Preparation Time: 15 Mins

Cooking Time: 35 Mins

Total Time: 50 Mins

Ingredients

For 4 portions

60 gms            Butter       

                      Pepper  - freshly ground, black 

6                    Potatoes    

                      Salt          

To garnish

1 tbs               Parsley  - chopped    

Method

Preheat an oven to 200°C. 

Use the small end of a melon baller to scoop out at least 12 nut-size balls of potato flesh.  Heat the butter in an ovenproof pan and sauté the potato balls over medium heat for 3-4 minutes, stirring frequently.

Transfer the pan to the oven and roast for 30 minutes, stirring occasionally, until tender and golden brown all over.  Season with salt and pepper and sprinkle with the parsley just before serving.
