This is a simple French dish of main-crop potatoes that are flavoured with bay and parsley and enrichened with cream.

Preparation Time: 10 Mins

Cooking Time: 1 Hr

Total Time: 70 Mins

Ingredients

For 4 servings…

60 gms            Butter       

2                    Bay leaves

450 gms          Potatoes  - peeled and sliced thinly        

3 tbs               Parsley  - chopped    

                     Pepper  - freshly ground, black 

                     Salt          

10 cl               Cream  - single        

Method

Heat an oven to 190°C.

Butter an ovenproof dish and place a bay leaf on the bottom.  Cover with a layer of potatoes and sprinkle with parsley and some salt and pepper.  Continue to make layers of potatoes, parsley and seasoning, finishing with a layer of potatoes.  Place the other bay leaf on top and dot with the remaining butter.  Pour over the cream.

Bake in the oven for 50-60 minutes until the potatoes are tender.

Variations

The single cream can be replaced with milk.
