This red cabbage is an excellent accompaniment to hot and cold meats and is just as good cold – particularly with cold meats. It has an equal balance of sour and sweet. It also has a little bite. Preparation Time: 15 Mins Cooking Time: 1¼ Hrs Total Time: 1½ Hrs Ingredients For 6 servings… 1 Red cabbage 60 gms Butter 1 Onion - chopped finely 30 gms Sugar - muscovado 1 Apple - peeled, cored and sliced 60 cl Wine - red 2 tbs Crab apple jelly 1 Bay leaf ¼ tsp Pepper - white 2 tsp Salt Method Pre-heat an oven to 190°C. Quarter the cabbage (remove the stalk section and discard) and then shred. Rinse the cabbage in cold water and drain well. Melt the butter in a flame-proof casserole large enough to hold the cabbage. Add the onion and cook for five minutes, until golden brown. Add the sugar and stir until it begins to caramelize. Then add the cabbage and all the remaining ingredients, stirring well to mix and cook until bubbling. Transfer the casserole to the oven and cook for one hour. Stir twice during the cooking. Taste and add more sugar if necessary.
