Red cabbage cooked with bacon is a tasty German dish that goes particularly well with pork or

venison.  In Germany is would use speck.

Ingredients

For     4  portions

1                    Apple  - cooking - peeled, cored and chopped

80 gms             Bacon  - smoked

1 pinch             Caraway seeds

1                    Onion  - chopped

                      Pepper  - black, freshly ground

1                    Red cabbage  - small, shreaded

                      Salt

2 tsp               Vinegar  - white wine

6 tbs               Wine  - white

Method

Sauté the bacon in a heavy-bottomed pan until the fat is rendered and then take it out.  Add

the onion to the pan and cook over gentle heat until soft.  Pour in the vinegar and wine.  Add

the cabbage, caraway seeds and apple.  Season with salt and pepper.  Cover tightly and cook

over a low heat for 30 minutes until cabbage is tender, but not too soft.
