Saffron rice is an excellent accompaniment to fish dishes. It has a fragrant taste and yellow colour – so it looks good as well as tasting good. The dressing adds an additional flavour. Preparation Time: 10 Mins Cooking Time: 15 Mins Total Time: 25 Mins Ingredients For the dressing 1 tbs Lemon juice 1 pich Saffron 3 tbs Honey - runny 6 tbs Olive oil Pepper - black, freshly ground Salt For the rice 400 gms Rice - long grain 1 tsp Oregano 1 pinch Saffron 700 ml Water 1 pinch Salt 25 gms Ghee To garnish Herbs - fresh - chopped Method For the dressing… Gently heat the lemon juice and saffron in a very small saucepan for about 30 seconds, until you can see the saffron dissolve and colour the liquid. Leave to cool and then whisk in the honey and olive oil. Season. To cook the rice… Put the rice, oregano and saffron in a large pan with the water. Add a pinch of salt, then bring to the boil, reduce the heat and simmer for 10 minutes or until the rice is tender. Drain thoroughly.Mix the ghee into the hot rice and tip into a serving dish. Drizzle on the secured amount of the dressing. Garnish with fresh chopped herbs. Variations If ghee is not available use olive oil or melted butter.
