Runner beans with lemon and garlic crumbs, is an unusual and special way of preparing runner beans that goes particularly well as a side-dish for fish. Preparation Time 10 Mins Cooking Time 10 Mins Elapsed Time 20 Mins Ingredients For 6 portions 2 slices Bread - white, crusts removed 50 gms Butter 2 cloves Garlic - crushed 1 Lemon - zest of, grated 1 handful Parsley - chopped 450 gms Runner beans - sliced diagonally into 1 cm lengths 1 tbs Sage leaves - chopped Method Drop the beans into boiling, salted water and boil until they are tender – about five or six minutes. Meanwhile, grate the bread into crumbs. Then melt the butter in a shallow pan over a moderate heat and add the crushed garlic, sage, parsley and lemon stirring them round in the butter for a minute or so without letting them colour. Add the breadcrumbs to the seasoned butter and continue cooking until the crumbs have soaked up the butter and are starting to turn pale gold. Drain the beans and put them into a warm serving dish and scatter over the garlic and herb breadcrumbs.
