This recipe for runner beans, combines crispy breadcrumbs and garlic with the beans to give a more substantial vegetable dish than simply boiled runner beans.

Preparation Time: 10 Mins

Cooking Time: 15 Mins

Total Time: 25 Mins

Ingredients

For 2 servings…

230 gms          Runner beans          

                      Salt          

1 tbs               Olive oil    

1 tbs               Butter       

1 clove            Garlic  - crushed      

                      Pepper      

60 gms            Breadcrumbs  - fresh white      

                      Parsley  - chopped    

                      Lemon rind  - grated 

Method

Cook the runner beans in boiling salted water and cook for 5 minutes.  Refresh them in cold water and then them into slices.

Heat the olive oil and butter in a frying pan and in it cook the garlic for 1 minute.  Add the beans and stir fry until nearly tender.  Season with salt and pepper.  Add the breadcrumbs and stir until they take colour and crisp-up a little - adding more butter if necessary.  Sprinkle with the parsley and lemon rind.
