Runner beans with garlic, mint and lemon dressing makes a lovely salad when served cold. It is also good warm or can be served as a hot vegetable. Preparation Time: 15 Mins Cooking Time: 7 Mins Total Time: 1 Hr Ingredients For 4 servings… 450 gms Runner beans - sliced and cut into 5 cm lengths 30 gms Butter 1 clove Garlic - chopped finely 1 squeeze Lemon juice 2 tbs Mint - chopped For the dressing 4 tbs Olive oil 1 tbs Vinegar - white wine ˝ tsp Mustard - Dijon Pepper Salt Method Boil a pan of water and cook the beans in it for five minutes - until slightly softened. Meanwhile, combine the olive oil, vinegar, mustard and seasonings to make the dressing. Drain the beans then sauté them in a little butter, with the chopped garlic, for 2 minutes. Transfer to a serving bowl and add the dressing plus a tiny squeeze of lemon and then scatter over the mint. Allow them to cool.
