Spinach cooked with cream is one of the finest French vegetable dishes.  It has an advantage that it can be prepared in advance and then kept warm over a very gentle heat or even re-heated.

Preparation Time: 15 Mins

Cooking Time: 10 Mins

Total Time: 25 Mins

Ingredients

For 2 servings…

680 gms          Spinach     

                      Salt          

30 gms            Butter       

                      Pepper      

1 pinch            Sugar       

1 pinch            Nutmeg     

30 ml              Cream  - double      

Method

Thoroughly wash the spinach and remove coarse stalks.  Put into a saucepan, cover and heat until the spinach has boiled down.  Season lightly with salt.  Drain and, when cool, squeeze as dry as possible.  Then chop finely.

In a saucepan, melt the butter, stir in the spinach and, when warm, add pepper, the sugar and nutmeg.  Bring the cream to the boil and stir it into the spinach.

Serve.

Variations

The nutmeg can be omitted, but the dish is better with it.

Cooking a sorrel leaf with the spinach adds to the flavour.
