This spinach dish can be served as a vegetable dish or as a tapas dish.

Total Time: 20 Mins

Ingredients

For 2 servings…

230 gms           Spinach     

                     Salt          

1 tbs               Breadcrumbs  - fresh 

4 tbs               Olive oil    

1 tsp               Vinegar  - Sherry      

                     Pepper      

Method

Rinse, shred and cook the spinach leaves in a lidded pan with a little salt.  This will take about 5 minutes.

Meanwhile, fry the breadcrumbs until golden in a little olive oil.

When the spinach is cooked, drain it well and turn it in hot oil.  Finish off with a sprinkle of vinegar, pepper and breadcrumbs.

Pile it on a single plate or in little dishes to serve 4 as a tapas dish.

Serve hot.
