This recipe for Brussels sprouts is excellent with roast game birds such as pheasants and partridges.  If it is served with roasted game birds, use the bacon from the roast, rather than additional bacon which has to be cooked.

Total Time: 30 Mins

Ingredients

For 4 servings…

200 gms          Brussels sprouts  - halved       

20 gms            Butter       

1 tbs               Water       

8 rashers          Bacon  - cut into strips

1 tbs               Fat  - ideally game   

                     Pepper      

                     Salt          

Method

Put the sprouts, cut-side down, in a frying pan with 15 gms of the butter and the water and cover with a lid.  Cook over a medium heat until they have turned golden brown on the cooked side and going soft - keep the sprouts moving to avoid them burning.  Add another splash of water if necessary.

In the meantime, fry the bacon in the fat until crisp.

Add the bacon into the pan of sprouts, check the seasoning and stir in the remaining butter.  Serve.
