Adding Parmesan cheese to Brussels sprouts gives them an additional flavour and one that makes them more southerly and Mediterranean.

Preparation Time: 15 Mins

Cooking Time: 20 Mins

Total Time: 35 Mins

Ingredients

For 4 portions

800 gms          Brussels sprouts  - prepared    

25 gms            Butter       

1 pinch            Nutmeg     

6 tbs               Parmesan cheese  - grated      

                      Pepper      

                      Salt          

Method

Cook the sprouts in salted boiling water until just soft and then drain them. 

Dissolve the butter in a frying pan and, when it starts to brown, add the sprouts and cook them for a few minutes over low heat.  Add salt and pepper to taste and a pinch of nutmeg.

Put the sprouts in a hot dish and powder with Parmesan.  Serve at once.
